Pisco
The National Flavor
Pisco, a kind of brandy, is the national drink of Peru. It originated during the colonial period as a cheaper substitute for the Spanish liquor known as Orujo which is made in virtually the same manner. This distilled beverage made from grapes is produced in various regions of the country. Pisco Sour is a cocktail made from pisco combined with key lime juice, the white of an egg and sugar.

Aji de Gallina

Chili chicken, consists of thin strips of chicken served with a creamy yellow and spicy sauce, made with ají amarillo (yellow chilis), cheese, milk, bread. Occasionally walnuts are added on special occasions or at upper scale restaurants due to its prohibitive cost in Peru. Traditionally the meat is from non-laying hens, but today almost exclusively made from more tender chickens.

 This section is about Peruvian-Style Chinese food, Peruvian cuisine has a lot of dishes, Peru adapted Chinese food to Peruvian food. I really recomend to try because you are going to test something different and amazing. 

 Combinado, Arroz chaufa mixto, Kam-Lu-Wantan, Chancho con tamarindo, Gallina chi-jau-kay are some of the main dishes in Peruvian Chifa.


Jalea Mixta
It is a traditional peruvian dish from the costal region, Jalea Mixta fried seafood and fish served with marinated onions and tartara sauce.


Arroz con Pollo, Arroz con Mariscos, Arroz Chaufa, Arroz Tapao, and .......all of these dishes show that peruvian people use rice as part of their culture gastronomica.



Lomo Saltado

Sliced beef (if made from the tenderloin it is "lomo fino") stir fried with onion, tomato, soy sauce, vinegar, chili (aji) and served or mixed with French fried potatoes (aka "chips"), and accompanied with rice.

Anticuchos

Anticuchos are brochettes made from a beef heart marinated in a various Peruvian spices and grilled, often sided with boiled potatoes and corn. They are commonly sold by street vendors and served shish kabob-style, but one may find them in creole food restaurants.


                                                      
Ceviche


This ceviche is the best you will ever have.  It is from Peru  and I love making it every time, you can eat and share this with your family. Belown you can find a personal ceviche.... Don't forget to order when you go to peruvian restaurant, it is delicious.
Papa a la Huancaina


 (Huancayo-style potatoes), a dish consisting of sliced boiled potatoes, served on a bed of lettuce with a slightly spicy cheese sauce with olives. Even if the name says that it is from Huancayo, it is actually from Chosica, in Lima, made by a "Huancaina" (a person from huancayo)
